Much like the aging process of making cheese, coming up with fitting names for his cheeses was a long and time consuming process. But a year after he started making cheese at Gunn's Hill Artisan Cheese, Shep Ysselstein has settled on the names for his creations. One of them is a tribute to the place where he originally started making cheese. "Handegg is the name of a tiny town in Switzerland where I worked when I was learning how to make cheese. I spent a summer there up in the mountains. We were milking cows and making cheeses from that milk. That cheese was inspired by the cheese we made up in the Alps." The "Handegg" cheese is the most firm variety produced at Gunn's Hill, and Ysselstein plans on aging some of them for a year or longer.
