Sweet, Sticky, Local Maple Syrup is On the Way

The warm spell this weekend means an early start to the Maple Syrup Season in Oxford County.

SWEABURG - Maple Syrup Season has officially started in Oxford County. 

Jakeman's Maple Products in Sweaburg started tapping their trees on the weekend. President and Fourth generation Maple Syrup farmer Bob Jakeman says they hope to have some fresh maple syrup ready very soon. 

"Well we try to make it into syrup as soon as we collect it, Maple sap is perishable, it's a sugar water solution, when it comes from the tree it is about 2 percent sugar and we concentrate it from there. The sap will attract yeast and mould when it has a weak solution of sugar, so we have to really process it in a hurry to get the best quality." 

Jakeman says the warm weather we got this weekend is ideal for making maple syrup. 

"About plus 6 in the day time, a little overcast, just like we have today, when it is really bright and sunny, it tends to raise the temperature a little to fast and on a cloudy day it kind of holds the tree at that sweet spot for getting the best maple sap out of the tree." 

He notes they will have some fresh maple syrup ready for the annual 4-H pancake breakfasts coming up in March.
