Swerving to avoid the collision could cause the driver to lose control, and in some cases even flip the vehicle. The best defence is to always be aware when driving, especially late at night and early in the morning, and constantly scan for signs of wildlife - moving shadows and reflections from eyes are two big indicators to watch out for.
