The ovens and mixers are working once again at Let's Eat Cake in downtown Woodstock.

WOODSTOCK - The timer is ticking down to the reopening of Let's Eat Cake.

The downtown Woodstock bakery was forced to close in March 2014 after a fire broke out in a storage room in the back of building owner Rene Hoelscher rents, to run her business out of.

After ten long, exhausting months and delay after delay, Hoelscher is excited to open the doors Thursday morning (January 22nd) with a few new additions for her customers. "We're going to have all the same treats that we had before, we're going to have a few new things like cake and pie by the slice so people can sit in here and have a coffee and have a piece of dessert now that we've got our seating in here."

The Dundas Street business will open Thursday at 10:00 am.  "We were hoping to open first thing in the morning for breakfast but because of the staffing situation and everything that's happen I won't be able to do that right away.  So we'll be opening 10 to 6 Tuesday to Friday and than Saturday 9 to 4.  And hopefully once we get busy enough and things go right we hope to open first thing in the morning, like at 8 o'clock for the business crowd to come in for breakfast before going in to work."

The neighbouring business, ONCE AGAIN upscale resale was also affected by the fire but were able to reopen in October 2014, however Hoelscher faced a number of hurdles with her insurance claim, delaying her months past her expected and anticipated reopening date.

Hoelscher is extremely grateful to the community and other local businesses - especially the downtown businesses that assisted her along the way.  She says the support is what helped her to keep fighting and moving forward.

The staff have spent the past few days cleaning and setting up the bakery as well as preparing some foods and trying some new recipes for their reopening.  They are also taking cake orders once again.
