In a few weeks, Oxford County will offer a tour of one of its most historic foods. Oxford's Tourism Specialist Cathy Bingham says cheese has been made in the county for quite some time. "Oxford is the Dairy Capital of Canada. Back in the 1800s and at its peak, there were 98 cheese factories here because of the ample supply of milk. So, why wouldn't we tap into that? It's authentic, we're seeing a resurgence of cheese factories and artisanal cheese makers here in Oxford now, so it's all a very delicious proposition," said Bingham. A Cheese Trail has been created to attract those wanting to tour what Oxford has to offer. There will be demonstrations as well as sampling of cheese at the designated tour stops. The trail will open March 25th.
