We'll have to wait just a bit longer for maple syrup season to start in Oxford County.
SWEABURG - The cold weather in Oxford County will delay the production of maple syrup.
The recent cold spell in the region will postpone production at Jakeman's Maple Products.
Jakeman's Maple Products Co-owner Bob Jakeman says despite the cold weather causing a delay, it's nothing new.
"No this isn't anything new, it's just going to postpone it. What we need is ten days to two weeks of that warmer weather with freezing and thawing and we can make a full crop."
He says they're just waiting for the cold weather to end.
"It's going to be the weather that dictates when we start. We can't start until the sap runs and it's probably going to take a day or so before the trees thaw out in order to release the sap. I think we're biding our time, we're waiting. We're ready to go when the trees are."
Jakeman says production has varied in the past. He says they started production in late January last year.
Although production will be postponed, Jakeman says he's still hopeful for a full season.
"We're still hopeful for a full season. It all depends on the weather that we get, when the weather changes around and we get some of those warmer days and cool nights to stimulate the tap flow."
